1/2 Bunch Onion, Spring 400 Gram Mushroom 2 Tablespoon Soy Sauce 2 Cup Spinach 4 Unit Egg 2 Cup Rice, Brown 1 Tablespoon Olive, Oil
Step 1 of 3 Heat oil in a frying pan over medium heat. Add mushrooms and cook, stirring, for 8 minutes or until tender and liquid from the mushrooms has evaporated. Add spring onion and cook for a further 1 minute. Add spinach and stir for 1 minute or until wilted. Step 2 of 3 Push mixture to one side of the pan. Add eggs, stir to scramble then mix through the other ingredients. Step 3 of 3 Add rice and soy sauce and stir to combine. Divide among four bowls and sprinkle with chopped cashews and remaining spinach to serve.
